I really want to serve mussels at the restaurant, they're delicious. I figure $2 cost per portion of mussels (assuming a 400g serving) plus 50 cents for garnish and whatever liquid they're steamed in so that's a food cost of $2.50 plus you need a nice roll to soak up the delicious sauce so we'll say an even $3 cost for the dish. Operating at 35% food cost (fairly average in the industry) I'd sell the dish for $8.57. Not bad! I could jack it up to around $10 making it one of the more expensive (and delicious) items on the menu. Additional bread $0.50 of course...

A lump of bread would come with certain dishes (soups, mussels, etc..) but if you want more you'd have to pay a nominal fee, say fifty cents or so, just enough to cover costs, I don't want to make a giant profit by selling bread by I also don't want to go out of business as a result. Perhaps bread could be free initially and then if abuse was a problem I could start charging.
