Ok, I'm back, woop dee do.

Today I made supper for my parents and it was delicious! Here's what I made:

Roasted Veggie Sammiches:

1. Make a balsalmic vinegrette with olive oil, mustard, garlic, plenty of S&P and of course, balsalmic vinegar. Add herbs if you've got 'em, I stuck in some dried thyme, oregano and basil.

2. Pour most of the dressing over your prepped veg. I used green peppers (didn't have any red), asparagus (trimmed and peeled), tomato and sliced onion. Save some dressing for the salad you'll be making, you know how to do that don't you?

3. Throw all that stuff on the grill, fry some sliced mushrooms on the sideburner while you're at it, you can do the tomatoes and onion on the side too if you're worried about stuff falling through the grill, my tomatoes were a mess, I shoulda done that.

4. Grate some old cheddar, set aside.

5. Mix equal parts pesto, mayo and pamasean cheese.

6. Slice some crusty rolls in half, spread with the stuff from #5, top with veggies and cheese, throw in oven to melt cheese.

All done! serve with salad.

Better than Mom's Fruit Salad:

-Get some fruit, chop it up, place in bowl.
-add zest and juice of one lemon, sugar to taste.

The lemon is the key to this one and of course you need the sugar to make it sweet again. Don't use bottled lemon juice, it sucks, lemons are cheap. Get a "rasp" at Lee Valley tools to zest your lemon with, they cost about $12 and rock out bigtime. I also added some frozen wild blueberries we had in the freezer and let them thaw while we were eating. They tasted great and dyed the whole thing purple which was kinda neat. My dad said the fruit salad was better than my mom's.
